Ingredients

Method
- Prepare all your vegetables and protein before you start cooking — chop the garlic, onion, chicken, and bacon.
- Separate any clumps in the cold, day-old rice.
- Mix the salt, pepper, and chicken powder directly into the rice before cooking.
- Heat your wok until smoking hot, then add the cooking oil.
- Add the onion and garlic and stir continuously for about 30 seconds, until fragrant — turn down the heat if needed so the garlic doesn’t burn.
- Push the aromatics aside, pour in one beaten egg, and stir for about 30 seconds until cooked through.
- Add the chicken and bacon and warm through briefly.
- Add the rice and toss to combine.
- Add the soy sauce, sweet soy sauce, and Worcestershire sauce (if using), then stir in the tomato ketchup.
- Mix everything together well, then fry the remaining egg separately and use it to top each serving.
- Garnish with chopped green onions and fried onions, and serve immediately.
Notes
Use cold, day-old rice — freshly cooked rice is too moist and will turn mushy. If you don’t have leftovers, spread freshly cooked rice on a tray and chill it in the fridge for at least 30 minutes before using. Make It Your Own
Just like pizza, the variety of fried rice is endless — feel free to swap in whatever vegetables, protein, or even soy sauce you have on hand. Sweet Soy Sauce
Look for sweet soy sauce (kecap manis), an Indonesian brand, for the best flavor. You can substitute a thicker, dark regular soy sauce plus a pinch of sugar if needed.
