They are easy and quick to cook (only 6 minutes) but the taste has a fantastic, deep and caramelized barbecue heavenly flavor using sweet soy sauce as a main ingredient.

Ingredients
  

  • 6 Pork Chops bone-in and thinner cuts preferred
  • 4 cloves garlic
  • 1/2 large onion
  • 1 Tbsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp salt
  • 1 Tbsp lime juice
  • 1 inch ginger optional
  • 3/4 cup sweet soy sauce kecap manis, Indonesian brand, plus more as needed

  • Meat thermometer

Method
 

  1. Combine the garlic, onion, cumin powder, coriander powder, salt, and ginger (if using) in a food processor or mortar and pestle, along with a few squeezes of lime juice to help tenderize the meat and add flavor.
  2. Blend or pound into a smooth paste.
  3. Stir in the sweet soy sauce — the star of this marinade, adding a deep, sweet, savory flavor that’s fantastic on pork, chicken, fish, and beef.
  4. Add a splash of oil so the meat won’t stick to the grill, and mix well.
  5. Add more sweet soy sauce as needed until the marinade turns a rich, dark color. Don’t be shy — more makes it taste better!
  6. Pat the pork chops thoroughly dry with a paper towel.
  7. Rub a little salt into each chop.
  8. Spread the marinade evenly over the top and sides of the chops.
  9. Preheat your grill to high heat.
  10. Grill the first side for 3-4 minutes, then flip and grill another 3-4 minutes, or until the internal temperature reaches 145°F (you can pull it off at 140°F and residual heat will finish the job).
  11. Remove to a platter and let rest for a few minutes before serving. Enjoy!

Notes

Sweet Soy Sauce
It’s important to use sweet soy sauce (kecap manis) here, not regular Chinese soy sauce — the flavor is completely different. Most Asian grocery stores carry it; the “ABC” brand is a great choice.
Doneness
Use a meat thermometer for the best results. Pull the chops off the grill around 140°F — the residual heat will carry them to a perfect 145°F while they rest.
