Method
- Prepare the ingredients by washing the kale well in cold water to make sure it's very clean.
- Chop the onion, garlic, and chili pepper.
- In a large wok, heat the oil and saute the onion, garlic, and pepper over medium heat for about 2-3 minutes, until the onion is soft but not browned.
- Add the water, then add the oyster sauce, salt, pepper, and sugar to the wok, and stir well.
- Add the kale and cook for about 2-3 minutes until it becomes soft, stirring occasionally. Serve hot.
Notes
If you don't like spicy food, simply leave out the Thai chilies — the dish is just as delicious without the heat.
Pairs wonderfully as a side with grilled fish or any grilled protein.
Leftovers keep well in the fridge for up to 2 days — reheat gently in a pan.
