- Combine the garlic, onion, cumin powder, coriander powder, salt, and ginger (if using) in a food processor or mortar and pestle, along with a few squeezes of lime juice to help tenderize the meat and add flavor.
- Blend or pound into a smooth paste.
- Stir in the sweet soy sauce — the star of this marinade, adding a deep, sweet, savory flavor that's fantastic on pork, chicken, fish, and beef.
- Add a splash of oil so the meat won't stick to the grill, and mix well.
- Add more sweet soy sauce as needed until the marinade turns a rich, dark color. Don't be shy — more makes it taste better!
- Pat the pork chops thoroughly dry with a paper towel.
- Rub a little salt into each chop.
- Spread the marinade evenly over the top and sides of the chops.
- Preheat your grill to high heat.
- Grill the first side for 3-4 minutes, then flip and grill another 3-4 minutes, or until the internal temperature reaches 145°F (you can pull it off at 140°F and residual heat will finish the job).
- Remove to a platter and let rest for a few minutes before serving. Enjoy!

Sweet Soy Sauce
It's important to use sweet soy sauce (kecap manis) here, not regular Chinese soy sauce — the flavor is completely different. Most Asian grocery stores carry it; the "ABC" brand is a great choice. Doneness
