Method
- Make a paste with the garlic and shallot, then combine with the ground chicken, ground beef (or pork), and shrimp.
- Add the salt, white pepper, and chicken or mushroom powder (if using).
- Stir in the oyster sauce and sesame oil.
- Add an egg if you like — it's optional, but makes for a more tender filling.
- Mix in the shredded carrot and chopped spring onions.
- Add the tapioca flour or cornstarch and mix until the filling is thick and firm.
- Take about a tablespoon of the filling and place it in the center of a dumpling wrapper.
- Pinch the sides to form pleats, then flatten the top slightly to shape the classic siomai.
- Brush a little oil on the wrapper for shine, then garnish the top with a bit of shredded carrot.
- Add 1.5 cups of water to the Instant Pot, then set the steamer basket in place and brush it lightly with oil so the dumplings don't stick.
- Arrange the dumplings in the basket with a little space between them so they don't stick together as they steam.
- Press the steam button and cook for 8 to 10 minutes.
- Serve with peanut sauce or sweet chili dipping sauce.
Notes
Choose Your Meat
I'm using a combination of ground chicken, beef, and shrimp, but you can use any combination you like — traditional siomai is often made with pork and shrimp, or chicken and shrimp. Egg is Optional
Adding an egg to the filling makes for a more tender dumpling, but it works just fine without it too. Serving Suggestion
